BROWN OR WILD RICE

The easiest and fastest way to prepare brown rice is in the oven. (Instant or Basmati or other

white rice is easy to do on the stove top).

2 cups (500 ml) water

1 cup (250 ml) brown or wild rice mix

1 tsp (5 ml) butter

1/2 tsp (2.5 ml) salt

Preheat oven to 350° F (180° C). Place all ingredients in a casserole dish with a lid. Place in oven and bake for 45 minutes. To speed up the process, you can pre-boil the water. It will then take 30 – 35 minutes. When done, remove from the oven and let sit for 5 minutes. Fluff with a fork and serve. (If there is still water in the casserole dish, bake another 10 minutes).

STEAMED CARROTS

Peel and slice 4 carrots. Slice into thin medallion sized pieces. Put in a pot with ½ an inch of water at the bottom. Bring to a boil. Reduce heat to low and simmer 10 minutes. Drain water, add 1 tsp. (5 ml) butter, 1/2 tsp. (2.5 ml) ginger powder and 2 tsp. (10 ml) brown sugar. Fantastic.

CUCUMBER AND TOMATO SALAD

Wash and peel an English cucumber. Cut into thin slices. Wash and slice a large tomato and mix together. Sprinkle with ½ tsp. (2.5 ml) dried dill, salt and pepper. You can also add a dash of rice vinegar if you have it.
